To achieve the best results the meat must be grilled in high temperature.
To retain the juiciness of meat, at first it must be cooked on a very hot flame for a short period of time, for the meat to be covered in a golden brown crust from both sides. Afterwards it will be enough to grill each side of the meat on the grill just once – if you move the meat too much, it will become drier and loose its beautiful appearance.
If the coal becomes too hot, you must dampen it: you can use water or any other edible liquid to do this.
To gain an even tastier and more interesting flavour, you can use wine or beer to dampen the heat.
